Now that we are in autumn, the season of the most typical products is approaching: sweet potatoes, chestnuts, pumpkin, … Here in Catalonia in autumn are also very typical panellets, a typical sweet, besides very rich, which is usually eaten the night of October 31, in addition to November 1, the Day of All Saints. Over the years, panellets have evolved. In the beginning they were made with the classic recipe with pine nuts, but over the years they have been innovating, trying new ingredients and playing with new flavors, going even further. In today’s blog, we bring you a recipe (of the many existing ones) to make panellets. The ingredients you will need are:
- 500 g. of ground almonds
- 500 g. of sugar
- 250 g. of boiled potato (or boiled sweet potato)
- For the garnish you can choose to use pine nuts, chopped raw almonds, grated coconut, chocolate shavings, quince jelly, etc.
Once you have all the ingredients ready, you can move on to the preparation, which is a bit of a long but fun process:
- Boil the potatoes and then remove the skins.
- When the potatoes are boiled and peeled, in a bowl, mash the potatoes until a dough is formed.
- Once you have created the dough, add the sugar so that it melts with the hot dough, and then add the ground almonds little by little, mixing everything with the potato dough and the sugar.
- When all the dough is well mixed, divide it to start shaping the panellets.
- Form small balls and spread them on a tray and then take them to the oven.
- When the balls are ready, it is time to add the garnish of your choice and to your liking.
- Once you have prepared the panellets, you can optionally beat an egg and use the mixture to paint them so that they are more golden after baking.
- Now that everything is done, preheat the oven to 180º.
- When the oven is hot, place the pan with the panellets in the oven for about 10 minutes (depending on the characteristics of each oven will be more or less time).
- Once the time has elapsed, remove the panellets from the oven and let them cool for a while.
- And… They are ready! Now you can eat and enjoy this delicious and traditional sweet.
